Prepare the preserving jars: Boil the jars and lids and rinse with hot water.
Wash, halve and pit the plums. Then mix them with the sugar and leave them to rest in a pot overnight. The next day, add the jelling sugar and vanilla sugar, bring to the boil briefly and pour the contents into clean jars up to 2 cm below the rim.
Caution: The rims of the jars must be clean and dry when closing. Place the jars in the preserving machine and fill with water until three quarters of the jars are covered.
Then cook with the lid closed at 90 °C for about 20 minutes.
