Prepare the preserving jars: Boil the jars and lids and rinse with hot water.
Wash the beans thoroughly. Meanwhile, bring water to the boil with a pinch of salt and a pinch of bicarbonate of soda (to keep the green colour). Add the beans and boil for 3 minutes, then rinse and drain.
Then boil 2.5 litres of water and dissolve 2 tablespoons of salt in it. Pour the beans into prepared jars and fill up with the water to 2 cm below the rim.
Note: The rims of the jars must be clean and dry when closing them.
Place the jars in the preserving machine and fill with water until three quarters of the jars are covered. Then boil down at 100 °C for approx. 1.5 hours.
