Ingredients:
300 g any kind of nuts
for almond puree: almonds (peeled for white, unpeeled for brown version)
spices, e.g. vanilla, cinnamon, gingerbread or speculoos spice
Preparation:
Toast nuts in a pan (without oil) while stirring them constantly until they take on a light golden color and smell pleasant. Then, put them in a blender and grind them. When the nuts start to collect on the sides of the blender, stop the machine and push the nuts down with a spatula. Continue blending until the nuts begin to release their oil. Then keep blending until a they reach a creamy consistency.
This process can take up to ten minutes and should be interrupted again and again by small breaks, so that the motor of the blender can cool down.
Tip: Store nut puree correctly
Fresh nut puree should always be stored in a clean, sealed jar in the fridge. It will keep there for several weeks. Over time, the oil may settle on top of the butter. If this happens, simply stir the puree. If stirring is difficult, simply place the jar in a warm water bath and leave in for a few minutes.
