Preparation time: in total approx. 2 hours Servings: for approx. 4 – 6 scoops
Ingredients:
100 g cornflakes
50 g grated coconut
½ tsp cinnamon powder
2 eggs
2 tsp. milk
Your favourite ice cream
neutral tasting oil for frying e.g. sunflower oil
Optional:
some fresh fruit as you like (e.g. strawberries, raspberries, banana)
some chocolate sauce
Preparation:
First shape the ice cream into 4-6 balls and place in the freezer for approx. 15 minutes.
Put the cornflakes in a zip-top plastic bag and then crumble them roughly with a rolling pin. Then add the coconut flakes and cinnamon and mix well. Next, mix 2 eggs and the milk in a bowl. Now spread the breadcrumb mixture on a plate and then turn the scoop of ice cream in the breadcrumb mixture so that the breadcrumb completely surrounds the scoop of ice cream. Then dip the breaded ice cream ball into the egg mixture and bread it again. Then put the breaded ice-cream balls in the freezer for about 45 minutes so that they get cold and hard again and can be breaded again. After 45 minutes, remove the breaded ice cream balls from the freezer and repeat the breading process so that the ice cream is well insulated. Afterwards place the breaded ice cream balls in the freezer for a final time for about 15-30 minutes. Re-freezing ensures that the ice cream in the breadcrumbs is really firm and retains its shape when deep-fried and does not melt when served.
Heat the deep fryer to approx. 180°C and then deep-fry the breaded ice cream balls in the hot oil until golden brown.
Finally, decorate with fruit and chocolate sauce and enjoy.
