The American dried meat can now be found in every supermarket and is a real trend snack. It is so popular because of its intensely spicy taste and it is also a good source of protein. We have a recipe for beef jerky to go with it:
Preparation time: in total approx. 12 h in total Servings: 1 portion (250g)
Ingredients:
500 g beef
1 clove of garlic
1 tbsp cane sugar
5 g ginger
2 tbsp ketchup
40 ml soy sauce
5 g smoked salt
40 ml Worcester sauce
Black pepper
Preparation:
It’s best to wear gloves to do this, because that way as few bacteria as possible get onto the meat. Remove the fat from the beef and slice it as thinly as possible against the grain. Ideally about 2-3 mm.
For the beef jerky marinade, peel the garlic and ginger and then grate finely. Add this to the meat with raw cane sugar, ketchup, soy sauce, Worcester sauce, salt and pepper. Mix the meat with the marinade and refrigerate for 2 hours. Remove the meat from the refrigerator and drain in a sieve. Then place on the rack of the dehydrator and dry at 70°C for 10-12 hours.
When the beef jerky has finished drying in the dehydrator, remove it from the grid. It will now keep for 2-3 weeks. Now you can snack on it on the sofa in the evening!
