Ingredients:
4 slices of bread (of your choice)
2 ripe avocados
4 eggs (size M)
1 tsp curry powder
4 tbsp butter
some salt, chilli flakes & black pepper
if required: 50 ml Condimento Bianco or white wine vinegar
Preparation:
Toast the bread slices in a toaster or frying pan until golden brown. Halve the avocados. Remove the pit, loosen the flesh from the skin with a tablespoon and cut into thin slices. Prepare poached eggs according to the instructions using your egg boiler.
Alternatively in a pot: Bring 1 ½ l water with Condimento Bianco to the boil in a large pot and stir with a wooden spoon until a whirlpool forms. Gently crack each egg into a cup, slowly slide one at a time into the simmering vinegar water and pull the egg white around the yolk with a spoon. Bring to the boil, pull the pot to the edge of the hob and let the eggs steep in the water for 4 to 5 minutes. Lift out with a sieve ladle and keep warm, covered.
Heat the curry powder in a small pan until it becomes fragrant. Then, add butter to melt and season everything with a pinch of salt. Cover the bread with avocado and place 1 egg on each. Then, season with salt, pepper and chilli flakes. Finally, pour curry butter over the eggs and serve.
