Our asparagus pot is full of ingredients that will be enjoyed by the whole family: Alongside with asparagus, juicy meatballs, hollandaise sauce, carrots and spring onions all go into the oven.
The result: a filling low carb dish that can also be enjoyed wonderfully with pasta, potatoes or rice.
Preparation time: in total approx. 45 minutes Servings: for approx. 4 people
Ingredients:
750 g ground beef
1 egg
1 tbsp medium hot mustard
2 tbsp breadcrumbs
1 bunch spring onion
750 g asparagus (white and/or green)
2 carrots
2 packets of Sauce Hollandaise (ready-made)
100 g grated cheese (to taste)
some salt & pepper
Preparation:
Wash the asparagus and cut into bite-sized pieces. Wash the spring onions and cut into fine rings. Peel the carrots and cut into fine sticks. For the meatballs, mix the ground beef with the egg, mustard, breadcrumbs and the white part of the spring onions and form into small balls. Fry in a pan and set aside.
Fry the asparagus and carrots in the fat of the meatballs for about 2 minutes. Then add the green parts of the spring onions, season everything with salt and pepper and fry for another minute. Dilute the hollandaise sauce with a little water and add salt and pepper as desired. Then add the cheese.
Now, place the meatballs and vegetables in an ovenproof casserole dish, spread the sauce over and cook at 160 degrees C for about 20-25 minutes.
