Remove the skin from the onions and cut off the ends with a sharp knife. Cut the onions into slices about 2 cm thick to form rings. Separate the onion layers with gentle pressure so that about 2 to 3 onion layers form an onion ring.
Warm the honey in a bain-marie until it is liquid. Then add 2 tbsp of the BBQ sauce, 2 tbsp of the hot sauce, the soy sauce and the spice mixture and mix well. Toss the onion rings in the marinade and wrap two to three slices of bacon around them, depending on their size.
Heat the grill to 180 to 200 °C and grill the onion rings in the indirect area for about 20 minutes.
In the meantime, mix the leftover marinade with another 2 tbsp BBQ sauce to make a thick glaze. About 5 minutes before the end of the cooking time, brush the onion rings with the glaze. This will give the onion rings a nice browning and make them crispy.
